Ingredients:
1 lb. Chicken (breasts, thighs or whichever you prefer)
4 bay leaves
1 chunk of a ginger root
1 box of chicken broth (or 2 cans)
2 large potatoes
2-3 handfuls of chopped celery
1 handful of chopped onions

2 1/2 cups Water
Boil chicken in water, just enough to almost cover chicken. Once almost cooked, take chicken out and set aside on a cutting board.
1. Pour the juice from the pot into a bowl using a strainer to separate the yummy chicken broth from all the leftover chicken parts, fat, skin, etc. Pour broth back into the pot along with the bay leaves . Cut your chicken off the bone into bite size pieces, then put back in the pot.
2. Add onions, pepper, and more chicken broth (store bought) to your pot so you have more liquid in your soup. Peel skin off the ginger root and cut up into 2-3 big chunks. Throw it in the pot. Once boiling, add potatos. Let cook through for 10 minutes. Add celery. Add pepper to taste. Turn heat down to medium.
3. Go ahead and cook your rice if you'd like rice in your soup (VERY GOOD). Otherwise, add some more potatoes for a heartier meal.
4. Let cook until celery and potatoes are soft. About 15 minutes. TAKE the ginger root chunks out so you don't eat them by mistaking them for potatos :) You're done!

5. Add a little cooked rice to a bowl, then top with your chicken and potato soup!
